
On the list of things I don’t get sick of during the holidays – fruitcake, a cup of tea, jammie days, tins of chocolate creams, fresh snow, and anything cranberry orange.
This “salad” is a really nice light dessert that can be served after a heavy meal, or a delicious treat to have waiting in the fridge for a Christmas morning accompaniment to gift opening.

- 1 can cranberry sauce (whole berry)
- 1 can mandarin oranges, drained
- 1 can crushed pineapple, drained
- 1 container whipped topping
- 2 cups mini marshmallows
- 1/2 cup shredded coconut
- Combine cranberry sauce, mandarin oranges, and crushed pineapple in a large bowl and mix well.
- Add whipped topping. Mix well.
- Add marshmallows and coconut, and mix well.
- Chill and serve.
