[Recipe] All-In-One Breakfast Casserole

I hope I’m not alone in being a big ‘ol casserole lover. I love them all.

As the weather is changing from Summer to Fall, I am instantly transported to memories of meals around our family’s table as the evening creeps in earlier and earlier every night. I think of sweaters and boots, crunchy leaves, and the smell of snow.

The beauty of the casserole is endless. A casserole is nothing more than a single dish combining many things – many ingredients combined them into one hearty, delicious dish. They’re perfect for the cool evenings of fall, and the coldest of winter nights. They’re also perfect for weekend brunches, and leftover lunches.

Throughout the fall and winter this year, I’ll be cooking up a casserole a week and sharing them with you. I hope you find a few new ones you’ll make for your family.

The first of these casseroles is a breakfast casserole. I recently served this to a very good friend of mine while she was staying with us on her way through from Nova Scotia to Toronto. It was lovely having her stay – we always enjoy her company. Jen, you are welcome in our home anytime.

The hollandaise served with the casserole is my husband’s specialty. He makes a few dishes really really well, including his amazing hollandaise. Thanks Husband. We served it alongside homemade biscuits and tandoori butter.

[Recipe] All-In-One Breakfast Casserole

Serves 8

1/2 lb ground sausage, cooked and crumbled (ham and/or bacon work well here too)
12 eggs
1 cup milk
1 cup shredded cheese
1 lb shredded frozen hash brown potatoes, thawed
salt & pepper, to taste

As well as any or none of the following:
1 green pepper, chopped, lightly sauteed
1 lg onion, chopped, lightly sauteed
1 cup mushrooms, chopped, lightly sauteed
* additional seasonings, if desired

Preheat the oven to 350F.

In a bowl, beat eggs and milk.

On a personal note, I’m including pictures of me cracking eggs. I’m horrible at it, really quite horrible actually. I cracked all 12 eggs myself. I was very proud.

Whisk the eggs and milk well.

Have the other ingredients ready in a large bowl.

Add the eggs.

Mix well.

Spread in a greased 9×13 pan.

Bake at 350 for 50-55 minutes, until well set.

Serve with any kind of savoury sauce: hollandaise, salsa, or white gravy would be scrumptious.

  2. I really need to start adding new things into my menu, and I think now that fall is here and winter is fast approaching, your casserole idea is fantastic. I also love that you can make them into leftovers – with Sean away so much over the fall/winter, it will be great to cook a meal and have a whole bunch of servings that I can warm up later. :o)
