[Recipe] Apple Crisp

Are you thinking what I’m thinking? Is an apple crisp a casserole?

I obviously vote a resounding, YES!

It is baked in a casserole dish, at least in my house. It is all put into one dish and baked, then eaten all together.

If this had a can of cream of something soup in it, I bet not one person would challenge this as a casserole.

See? It’s a casserole. Besides, I have a lot of apples to use. This is one of our favourite ways to do it.

This apple crisp is a classic dessert. It is sure to please pretty much anyone who walks through your door for dinner. It’s also very versatile – you can add chopped nuts or cranberries to it, and that will work just fine. Serve it with whipped cream or a scoop of vanilla ice cream if you’d like, although this stands up just fine on its own.

I will confess that this recipe isn’t my mom’s recipe. I just wasn’t sure I was ready to give that one up yet. Mom’s apple crisp is amazing. Maybe I’ll share that recipe some other time, when I’m ready.

This recipe is a close second.

[Recipe] Apple Crisp

Apple Mixture:

6 – 8 apples (I used cortlands)
1 Tbsp brown sugar
1/2 cup brown sugar
1 tsp cinnamon
1 Tbsp lemon juice (optional)

Crispy Bits:

1 cup flour
1 1/4 cup oats
1/4 tsp baking powder
1/4 tsp baking soda
3/4 cup brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup butter, melted

Preheat oven to 350F.

Slice apples. I didn’t peel mine, since I like the texture and extra fibre you get from leaving the peels on. If you’d like to peel the apples, by all means, do so.

Add the remaining ingredients listed under the ‘Apple Mixture’ heading above to the apple mixture.

Put the apple mixture in a large casserole dish. Spread the apple love around the dish evenly.

In a large bowl, combine the remainder of the dry ingredients. Add melted butter and mix well.

Try not to eat this crumble mixture. It is extremely tempting, and if you put one little bit of this mixture in your mouth, you just won’t be able to stop yourself. Let’s make a deal – if any of the little crumbles fall out of the bowl, they’re fair game and you can pop them in your mouth, okay? That doesn’t mean you should mix the crumble in a cereal bowl either.

Can you imagine? How freaky would that be?!?

Spread the [remainder of the] crisp mixture over the apples, covering them well.

Peak!

Bake for 45 minutes.
