[Recipe] Baked Oatmeal with Blueberries

If you haven’t eaten breakfast yet, there’s still time to make this!

Oh goodness this baked oatmeal is yummy. I just took this out of the oven and had it for breakfast. It’s like breaking breakfast news. Husband and I both really loved it. I’m already looking forward to eating it for tomorrow morning’s breakfast.

This recipe is really packed with healthy ingredients too – oats, cinnamon, coconut oil, and blueberries – they’re all so good for you. Oats are great for helping to lower cholesterol, cinnamon helps keep your blood sugar levels steady, and blueberries help with all kinds of conditions including cancer and diabetes.

The large flake oats in this recipe, along with the coconut, really add great texture. You could also use regular oats if you’d like – just don’t use instant, it just won’t turn out quite the same. If you don’t have fresh blueberries, you could probably substitute frozen blueberries, although I’ll admit that I haven’t tried that yet. You could also substitute a finely chopped or shredded apple.

I ate mine with a small pool of milk in the bowl, topped with sliced bananas and pomegranate greek yogurt for some protein. I also baked it with coconut oil. I’m always looking for new ways to use coconut oil, and it worked very well in this recipe.

Once this baked oatmeal recipe cools, it can be cut into squares for snacking too. It could also easily be stretched into more servings.

[Recipe] Baked Oatmeal with Blueberries

Adapted from Mennonite Girls Can Cook

Makes 6 servings

3 1/2 cups oats (not instant)
2 tsp baking powder
1 tsp salt
1/2 tsp cinnamon
1/2 cup unpacked brown sugar
1/2 cup coconut (optional)
1/4 cup oil – I used coconut oil
2 eggs
1 cup milk
1 cup blueberries

Preheat oven to 350F. Grease an 8×8″ pan.

Mix oats, baking powder, salt, cinnamon, brown sugar, and coconut in a large bowl. Make a well in the center.

Add oil, eggs, and milk to the well and mix all ingredients well.

Gently fold in blueberries. Pat the mixture into the prepared pan.

Bake for about 30 minutes.

Serve warm with milk.

  • 1 cup milk
  • 1 cup blueberries

Instructions
 

  • Preheat oven to 350F. Grease an 8x8" pan.
  • Mix oats, baking powder, salt, cinnamon, brown sugar, and coconut in a large bowl. Make a well in the center.
  • Add oil, eggs, and milk to the well and mix all ingredients well.
  • Gently fold in blueberries. Pat the mixture into the prepared pan.
  • Bake for 30 minutes.
  • Serve warm with milk and/or yogurt.
