Who doesn’t love a classic crispy rice square? There’s something about them that just takes me back to being a kid, standing on a chair in Mom’s kitchen, watching her make the classic treat. I couldn’t wait until they were cooled and we could cut into them.
These lumps of coal are a spin off of the classic treat, with the addition of chocolate cookie crumbs, making them look like lumps of coal, appropriate for Christmas.
Kids love these little guys, and I hope you do too. They’re much tastier than the lumps of coal I’m sure so many of you got in your stockings as kids.
[Recipe] Lumps of Coal
1/4 cup butter
1 14 oz package marshmallows
5 cups crispy rice cereal
1 1/2 cups chocolate cookie crumbs
Melt the butter in a large pot over medium heat.
Add the marshmallows to the butter and stir until the marshmallows and butter have melted together. Remove the mixture from the heat.
Stir in chocolate cookie crumbs.
Stir in the crisp rice cereal, making sure it is well coated with the mixture.
Drop by spoonfuls onto parchment paper. Allow to cool before eating.
Note: It helps to wet your spoon or scoop when dropping these onto paper. It helps the treats not stick quite as badly to the spoon.
