You know, sometimes a recipe is no more than putting together foods and flavours you like to make one really great dish. This salad is just like that – a lot of great ingredient friends who haven’t all been together in a while, snuggled close on a dinner plate.
All you really need for this grilled chicken and spinach salad is grilled chicken and spinach. That way, you’re getting your greens and protein and after that, it’s up to you. Throw whatever ingredients you have on hand on top of this salad to make it your own. Top with your favourite dressing and Bob’s your uncle.
Bob’s your uncle. Did I use that expression right there? My husband continually laughs at me because I have no idea how to properly use that expression. But I am not dismayed, I just throw a good ‘Bob’s your uncle’ in wherever I think it fits. Sometimes it works, sometimes he just laughs. I think I got this one right though.
Here are some other suggestions you might want to pair with your grilled chicken and spinach:
- mandarin oranges, crispy chow mein noodles, sesame seeds, and ginger sesame dressing
- cherry tomatoes, bacon, crispy onions, and buttermilk ranch dressing
- sundried tomatoes, basil, goat cheese, pesto dressing
The possibilities are endless.
[Recipe] Grilled Chicken and Spinach Salad with Berries, Avocado, Feta, and Green Onions
Once you have your ingredients chosen, just layer them on the plate.
Feta. Green onions.
Chopped roasted nuts.
We decided we’d use a prepared dressing to top tonight’s salad, Kraft Berry Balsamic, a new dressing in a Kraft line of fruit and veggie based dressings. It was lovely. I’m also a big fan of the Kraft Roasted Yellow Pepper dressing.
The new line of Kraft dressings are a great dressing if turn to if you’re in a hurry to put your salad together. They are look cal too. A nice commercial salad dressing. I definitely recommend them.
That’s all there is to putting together a great grilled chicken salad. A quick go-to summer meal that is healthy and satisfying.
