12 Days of Christmas 2017, Day 4: [Recipe] Coffee Butter Bits

I like reading cookbooks. Sometimes I spend an entire evening just looking through them, just imagining what each recipe would taste like, or how I may change it to better suit our tastes.

I came across this recipe in an old church cookbook. You know the type I mean – those old spiral bound cookbooks with the stained pages and the cute little notes from the cooks and bakers who’ve made those old recipes for years. Those cookbooks are the best ones – you can always trust them to give you return on your investment. Well, except for all of those jello salads. I just can’t get behind a jello salad.

Wow butter cookie dough, day 2!

Remember that fantastic cookie dough we mixed up yesterday? It was great, wasn’t it? Here’s how that dough does double duty.

You’ll only need one or two extra ingredients to completely switch up yesterday’s wow! butter sparkle cookies – mini rolo pieces, and semi sweet chocolate chips (if you’d like). You’ll also need a mini muffin tin.

12 Frilly Days of Christmas 2015, Day 5: [Recipe] Wow! Butter (or Peanut Butter) Sparkle Cookies

One dough. Two cookies. That’s the super versatile time saver I’m offering you the next couple of days.

First up – a wow (or peanut) butter sparkle cookie. This cookie is part sugar cookie, part peanut (or wow) butter cookie. These cookies disappear quicker than any other cookie I bake at home. They’re also really quick to mix up and the recipe is quite easy to remember. I don’t even have to look it up anymore.

We use Wow! butter at our house, and it works beautifully in place of traditional creamy peanut butter in these cookies. We’re so used to wow butter now that we don’t notice anyway, but I’m not even sure you could tell the difference at all. It is completely interchangeable with peanut butter in this recipe. Whether you use wow butter or peanut butter, be sure not to use the natural kind – this recipe needs the creamy, sugar-added kind.

12 Days of Christmas 2015, Day 2: [Recipe] Chocolate Crackle Cookies

Chocolate crackle cookies.

All the recent years of my life I’ve seen these cookies, in many forms and called many different names, on holiday sweet trays. I confess that I hadn’t made them myself until just this year. The recipe I used, from the Lantic Sugar website, is wonderful. A couple of changes I made to the original recipe – I didn’t add the instant espresso powder and I made about 60 cookies out of a single batch, not the 36 cookies the original recipe yields.

These are wonderful cookies! They have a little bit of crunch on the outside of the cookie and a soft, chewy center. They’re a dense, dark chocolaty treat. Perfect with a cup of coffee.
