Recipe] Raspberry Sour Cream Pie

Ingredients

  • 1 deep dish 9" pie shell
  • 2 eggs
  • 1 1/3 cup sour cream
  • 1 tsp vanilla
  • 1/3 cup flour
  • 1 cup sugar
  • 3 cups fresh or frozen raspberries
  • Crumble:
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup butter

Instructions

  • Preheat oven to 400F.
  • Beat the eggs in a large mixing bowl.
  • Whisk in sour cream and vanilla.
  • Add flour and sugar and whisk just to combine.
  • Carefully fold in berries.
  • Pour mixture into pie shell. Bake for 30-35 minutes, or until the centre is almost set.
  • For the crumble, mix brown sugar, flour, and nuts together. Cut in butter.
  • Sprinkle crumble over the pie, and bake under 10-15 minutes, until golden.
