On to week 3!
I really feel like we’re doing well with this, even if we aren’t sticking to the plan 100%. Our fridge is no longer overflowing with food that will eventually throw out, and I’m estimating that we’re saving somewhere around $40 a week.
Here’s what we came up with for this coming week:
Breakfasts: Baked Oatmeal with Blueberries (recipe to be posted tomorrow), eggs, pancakes, smoothies, cereal, coffee
Lunches: leftovers, sandwiches, fresh veggies, cheese strings, yogurt, fruit
Dinners:
Sunday: sausage and peppers fettuccine with rose sauce
Monday: Chicken wontons, Skinnytaste’s Asian Edamame Fried Rice, egg rolls
Tuesday: White fish with herbed mayo and parmesan, mashed potatoes, carrots
Wednesday: Pioneer Woman’s Beef with Snow Peas (using venison), rice
Thursday: Burgers and Fries
Dessert(s): TBD, if anything
Groceries we bought this week (we spent about $130):
greek yogurt
sugar snap peas
mushrooms
maple syrup
cheese
frozen blueberries
fresh blueberries
tomatoes
parmesan
butter
honey crisp apples
fresh fettuccine
cheese strings
coffee creamer
spaghetti squash
cauliflower
Let’s go, week 3!
