Saturday I posted a fantastic recipe for slow cooker balsamic beef. Served it over horseradish mashed potatoes with carrots. Divine.
Being just the two of us eating a roast though, we have lots left over, even from a small roast. I’m not complaining though – I LOVE leftovers. I love finding good ways to use them too.
Let me tell you that this beef roast made for some amazing leftovers. We turned the roast into the best balsamic beef and blue sandwiches. They were amazing. We still have enough roast to this again tonight, and I can’t wait. Seriously, they were really that good.
Here’s how I threw them together:
I sauteed some onions and mushrooms in butter.
Yum. This already looks good.
Then I put some steak sandwich buns in the pan with lots of butter to toast them up well.
Pile the buns high with shredded beef, onions, mushrooms, and chunks of blue cheese. If you don’t like blue cheese, or if you happen to be pregnant or something, any cheese will work just fine here.
These took less than 10 minutes to assemble. Added a side caesar salad for a quick and really delicious meal. That’s how you “grab something quick” on a weeknight.
