Happy New Year! Let’s ring in 2014 with a simple, healthy recipe, shall we?
Roasted sugar snap peas. It’s been a while since I’ve found a recipe this quick, easy, and healthy. Perfect. A green vegetable on the sweeter side, left with a little bit of bite, roasted in garlic, olive oil, and seasoning. Ready in about 15 minutes. Everybody got time for that.
This is my new favourite side dish, hands down. My goodness they’re delicious. I could eat them at every meal.
We found a great big bag of sugar snap peas at the Costco on our last visit, not really sure what we’d do with all of them other than throw them in stir fries. Then I watched Rachael Ray roast sugar snap peas in the oven on a Food Network holiday special. This is my adaptation of that recipe.
[Recipe] Roasted Sugar Snap Peas
Makes 2 servings
3 cups sugar snap peas
2 Tbsp olive oil
2 tsp minced garlic
1/2 tsp salt
1/2 tsp pepper
pinch of red pepper flakes (optional, of course)
Preheat oven to 450F.
Spread the sugar snap peas out in a single layer on a baking sheet.
Toss the sugar snap peas with the remainder of the ingredients.
Bake for 10 minutes.
